Potato Quiche story
Quiche is a French tart consisting of a pastry crust, filled with savoury custard and pieces of cheese, vegetable, meat or seafood. But it may be related to the German Kuchen meaning ´´cake´´or ´´tart´´. Are you looking for a quick lunch or dinner? Are you gluten-free? Don´t worry! This one is tasty, crunchy and gluten-free.
Ingredients
The base
680g Ny potatoes fra Reddal, salt to season the water
- cook in salty water till soft (to be able to crash it with fork)
- brush tin of size ø28 cm with 1 tbsp of vegetable oil
- fill up with crashed potatoes to form a nice base for quiche (same as we do with classic dough)
- preheat an oven to 220C, bake for 20-25min till crust its golden
- when you take out, you can form edges with tea spoon so dough is spread evenly
Filling
100g cream
4 whole eggs
110g grated of your favorite cheese Synnøve (cheddar, Edam125g feta cheese (Jacobs)
1 full hand of baby spinach (also you can use 2 pc of blanched asparagus)
- mix well all ingredients, fill into chilled potatoes base
spread evenly, bake in preheated oven at 235c for 30 min until perfect gratinated
Tips: Serve it with tomatoes and green salad (drizzled with olive oil and a dash of lemon juice). For extra condiment, don´t forget a full spoon of rømme (gently seasoned with a small clove of grated garlic, salt ,pepper and pich of smoked paprika).
