It is my favourite mussel recipes , one of classic. Usually cream base, wine, garlic and butter. This ones are an upgrade for easy gourmet food. Tasty, rich in flavour and definitely for the people who likes asian touch.
Ingredients for Oven Steamed Mussels
500g live mussels, washed and cleaned.
1/2 leek trimmed and julienne.
1/2 red onion peeled and thinly sliced.
1 red carrot peeled and julienne.
1 spring onions trimmed and julienne.
1 green chili seeds out and thinly sliced.
2 garlic cloves, crushed.
1 cm of fresh ginger peeled and julienne.
2 tbsp of sake or white wine ( your favourite ones )
2 tablespoon light soy
2 tablespoon butter
2 sheets of baking paper
Methods
Pre-heat the oven to 200 degrees
Remove all dirt and open shells that do not close or show no sign of movement.
Mix together the mussels and vegetables, along with chili, garlic, and ginger in the large bowl.
Lay down the paper and spread the mussels in the center and pour the sake, soy, and dot with butter.
Pull up the edges of the paper to form a bundle, and tightly close it with string
Bake in the oven for over 20 - 25 min, until the mussel shells open.
Remove from the paper and place into the bowl, ( you can also put it into a plate or bowl and finish off in the microwave if it's a not ready, cover with plastic lid. Needs 1min).
