Lobster Bisque story
Using a combination of lobster shell, bodies, claw meat and tail meat provides the bisque its telltale taste and feel. Seasoned with mirepoix, sherry, pastis and herbs.
Ingredients
300g carrots, chopped
100g fennel, chopped
150g leek, chopped
150g white onion, chopped
2pc celery sticks, chopped
3pc bay leaves
4 pc garlic cloves, chopped
5g coriander seeds
50g shallot onion, chopped
30g tomatoes puree
5g fresh ginger
50ml pastis
3L sterling white halibut stock
2 pc lobster, or 1,2kg shells
Method
Roast the shells in the oven 175C for 20 min. In the medium pan sautee onion, carrot, leek and all lobster bisque arotimatic.
