I was delighted to be invited to the trip by Fiskecentralen ( Ole and Arild, Lars) and experience the know-how full scene behind Guy Sanchez Huitre, know - how, philosophy, innovation, constant strive for quality and vice approach towards sustainability.
Guy Sanchez Oyster
In 1950, Christiane and Luis, Guy´s grandmother and grandfather, were oyster farmers. In 1982, his parents, Nadine and Rene Sanchez became oyster farmers Quite naturally. They passed on their passion for the sea and for their profession to their son.
´Every day; oyster farmers work with oyster tables and are in permanent contact with water´
From the age of 15, Guy weaved his way among a few tables in his boat. Today, with 50 tables, he produces an average of 400 tonnes of oysters for sale each year. His two sons, Loic and Gael, joined him.
As the biggest producer of oysters in the Mediterranean, he has designed innovative machines to improve the quality of their oysters and good working conditions for his employees. Because he puts people first in his establishment.
Nothing is wasted here
Everything is recycled and decanted. Slides recover the tiny oyster shards that travel to the drains and the water is decanted before being returned to the lagoon. In this way, our approach hugely reduces the environmental impact.
